Wash and chop veggies and squash. I sometimes buy pre-chopped veggies and squash at the grocery store to save time.
2 tbsp olive oil
1 medium onion
1 tbsp minced garlic
2 lbs ground meat (I used half ground beef and half ground bison)
1 medium green pepper
8 oz mushrooms
1 can diced tomatoes
1 can tomato sauce
1 can tomato paste
1 medium butternut squash
In a large heavy bottom pot, heat olive oil and saute onions and garlic until fragrant.
Add ground meat and cook until brown. Add pepper and mushrooms and cook until mushrooms have released most of their liquid.
Add diced tomatoes, tomato sauce and paste, squash and seasonings.
Simmer on low for two hours until squash is cooked.
